If you love Mexican food, then you’ll love this Adobo Guacamole recipe made with only a few ingredients and 5 minutes of prep. It’s a great appetizer, snack or side for Mexican dinners, Cinco de Mayo, taco nights, parties and meal prep!

This Homemade Guacamole is really easy to make using the main ingredients of ake ripe avocados and lime juice. But adding in the smoky adobo chili elevates it to something special. You might want to skip jalapeno and adobo chili if making for children.

I love serving this with seriously easy Air Fryer Chicken Fajitas or these Instant Pot Chicken Fajitas that are so easy you can make them for dinner tonight.

This homemade avocado dip is best made just before serving with a whole load of crunchy vegetables, tortilla chip and pita wedges. Or if you are like me, then just before adding to bacon sandwiches or huge juicy Air Fryer Burgers.

Why You’ll Love This

  • Simple – Just mash, chop and toss a few fresh ingredients and serve.
  • Leftovers – great way to use up leftover avocados.
  • Affordable – This is a great budget-friendly side.

  • Red onion– Finely dice the red onion. But you can use white onion or green onion.
  • Jalapeño – Or for a bit more heat try some serrano.
  • Adobo – adobo chili powder adds a smoky flavor.
  • Lime– Cuts through the creamy flavor of the avocado.
  • Cilantro – Adds a depth of flavor and if you don’t like it then just skip it.

Recipe Tips

  • Make sure the avocados are ripe before mashing. If they are not ripe, then leave them on the counter for a few days till they are ripe. Unripe avocados will not mash enough for Guacamole.
  • For the best dip – make sure to not puree the avocados completely. Some chunky pieces add texture.
  • Use lemons if you don’t have limes and adjust the citrus flavor to your taste.
  • To keep it low carb, make sure to serve with low carb chips.

Recipe Variations

While the flavor combination of this easy Guacamole is hard to beat, it’s super easy to change up and customize it. There are sooooo many delicious options to choose from too. Here are just a few versions to try:

  • Ground cumin
  • Finely diced tomatoes
  • Cojita cheese
  • Chorizo or bacon
  • Adobo sauce

Storage

  • Store – Store leftovers in the fridge for up to 4 days. To avoid it going black, cover with some plastic wrap.
  • Freeze– We don’t recommend freezing this.
