  4. loved that these didn't require separating eggs and whipping whites, just a good quick throw it together recipe. I used one whole egg plus 2 whites that needed to get used up. Didn't find them to be salty at all (I used Kerrygold salted sweet cream butter). Was nice there wasn't sugar in them since I'd rather add sweet toppings! Made for a nice, crisp waffle that held up well under almond butter and maple syrup toppings. Made 6 waffles in my iron.

Tweaks

  1. I think this is a wonderful basic recipe but definitely needs some adjustments to make it a great recipe.I made it twice, the first time it came out pretty doughy. It might have been because I always substitute half of the white flour for wheat. The second time I separated the egg yolk from the white and beat the whites until stiff before adding to the batter. That made a HUGE difference in the consistency of the waffles. Also, since this recipe calls for baking soda, do not add anymore salt. Baking soda is essentially salt already. I even used only a little more than half of the baking soda and no salt. Last but not least, add a few tablespoon of sugar for some balance and most definitely vanilla extract!

  2. It's really not fair to rate this recipe as is since I tweaked it to my liking. I did not have buttermilk so I substituted 1 cup whole milk and 1 cup plain greek yogurt. I eliminated the salt. (Really do not need it) Used coconut oil instead of butter, added 1/2 tsp. vanilla 1/2 tsp. coconut extract and 1 Tbls. sugar and 1/2 cup sweetened grated coconut. Guess you can tell I love coconut. The coconut taste was not overwhelming but just right. If you are not a fan of coconut, just eliminate it and increase the vanilla to 1 tsp, and use butter. They are perfection. Thanks for sharing.

  3. I made some modifications (veganized it) and it turned out great. Instead of buttermilk, I added 2 tablespoons of white vinegar to soy milk and let it curdle (you can do this with cow's milk if you're out of buttermilk), I used Ener-G egg replacement to make it cholesterol free and lower fat, and I used Earth Balance in place of butter. They came out crispy and delicious. I added some chocolate chips too for sweetness. I didn't realize the waffles wouldn't be sweet since it didn't call for sugar, but it's perfect if you like to add maple or any sweetened syrup to it.

  4. I made these with whole wheat flour and applesauce instead of butter. I also added a splash of vanilla, a teaspoon of cinnamon, and a tablespoon of brown sugar. They were good, but need a little more flavor. So, next time I will add mashed banana and some mini chocolate chips or some chopped apple, too. Thanks for a good base recipe.
